Behind the moody ambiance of the dining room lies the high-octane, hazardous environment of the commercial kitchen. Achieving Hospitality Compliance in food preparation areas is strictly governed by the Food Standards Agency (FSA) and BS EN 12464-1.
500 Lux for Safe Food Preparation
BS EN 12464-1 legally mandates a maintained illuminance of 500 Lux on all kitchen work surfaces, chopping boards, and cooking ranges to ensure food safety and prevent knife injuries.
Chefs are working rapidly with razor-sharp knives, boiling oil, and high-speed machinery. Dim lighting is an occupational hazard. Furthermore, chefs must be able to visually inspect meat and poultry to ensure it is cooked to safe temperatures. High-output, low-glare LED panels must be strategically placed directly over the stainless steel prep benches to eliminate shadows cast by the chef's body.
Shatterproof (IK08+) Polycarbonate Diffusers
To comply with strict food hygiene regulations, all luminaires in a commercial kitchen must feature shatterproof polycarbonate diffusers to prevent glass contamination in the event of an impact.
If a chef accidentally strikes a light fitting with a pan, a standard glass or acrylic diffuser will shatter, raining invisible shards into the food preparation area below, resulting in a catastrophic hygiene failure and immediate closure by environmental health inspectors. IK08-rated polycarbonate diffusers will bend and dent under impact, but they will never shatter, ensuring absolute food safety.
IP65 Washdown and Grease Resistance
Kitchen lighting must be rated IP65 (dust tight and water jet resistant) to withstand the daily ingress of aerosolized cooking grease and the rigors of high-pressure nightly deep cleaning.
Standard office LED panels installed in a commercial kitchen will fail within weeks. The vaporized grease from the fryers gets sucked into the light fitting, coating the LED chips and causing them to overheat and burn out. IP65 cleanroom luminaires feature fully sealed, wipe-clean surfaces. They repel grease and can be aggressively sanitized with chemical sprays without compromising the internal electronics.
